What's on the Menu? Taco Dinner

Okay, who doesn’t need a dinner idea?  Taco dinner night is always popular in our house and we try to schedule it routinely.  Our taco recipe is simple and healthy.  We use ground chicken and our toppings do not include cheese or sour cream.  I make fresh salsa and guacamole or you could use store-bought products.  Our kids also enjoy having all these fixings with tortilla chips.  As there are many taco recipes out there, here is my quick and easy version and hope it inspires yours.  Enjoy your tacos with a glass of margarita or lemonade.

Directions:

For the protein:

Ground chicken (2 pounds for serving 4 people)

One yellow onion chopped

1 tsp Cumin

1/2 tsp Ground coriander

1/2 tsp Ground ginger

1 tbs Paprika

Salt and black pepper, to taste

Sauté chopped onions until tender in a pan in medium heat on the stovetop.  Add chicken and all the spices (you can get a taco spice mix package at the store).  Stir and cook until chicken is done, about 15 min.

For fresh salsa:

In a medium bowl, mix 2 red vine tomatoes chopped, 2 tbs chopped red onions, 1 tbs chopped cilantro, juice of 1 lime/lemon, salt to taste.

For guacamole:

In a medium bowl, mix 2 ripe avocados, 2 tbs chopped red onions, 1 tbs chopped cilantro, juice of 1 wedge of lime/lemon, salt to taste. For heat, you can add a bit (1 tsp) of chopped jalapenos.

For vegetable topping:

Thinly slice lettuce and red cabbage. And, coarsely chopped cilantro.
