What's on the Menu this Week? Vermont Country Deli

When it is Candice’s turn to host, she alternates between cooking and getting take out.  This week, she was very proud of herself because Vermont Country Deli was her answer to hosting a yummy lunch!

Step 1:  Stop at Vermont Country Deli in Brattleboro and purchase a frozen broccoli/cheddar quiche and your favorite cookie dough.  She selected molasses cookies and chocolate chip cookies.  (All of these items are available in the “Vermont Country Market” adjacent to the deli.)

Step 2:  Place the quiche in the refrigerator two days before you are planning to serve it.

Step 3:  Buy your favorite salad ingredients and easy to serve fruit a day before.

Step 4:  Cook chicken for dinner the night before and make extra.  She chose breaded chicken cutlets.

Step 5:  The day of, place the quiche in the oven at 350 degrees 45 minutes before lunch is to be served.  Meanwhile, make a salad, cut up the leftover chicken, and wash the fruit.  Plate everything.

Step 6:  After 30 minutes, reduce the oven temperature to 250 degrees and leave quiche in the oven to stay warm.  Pull the cookie dough out of the freezer and set up on a cookie tray.

Step 7:  While you are enjoying lunch, place the cookie dough in the oven at 375 degrees.  Be sure to set the timer!

Step 8:  Enjoy delicious cookies with delicious cappuccino after your delicious lunch!

Additional tips: Vermont Country Deli accepts call ahead orders, so be sure to call at least a day ahead to request your favorite cookie dough is available for you. Also, grab some of their famous macaroni & cheese while you are there. You won’t be disappointed.

Of course, most of you are probably nowhere near Vermont Country Deli…the point is, pick a delicious, easy to serve dish from one of your favorite places; augment it with salad, fruit, cookies, and cappuccino; and, you are all set for a terrific lunch!
