What's on the Menu? Chicken Yakitori

This recipe is great for grilling chicken breasts or boneless thighs.  The chicken not only tastes amazing, but also looks beautiful and is perfect for entertaining.

For Yakitori sauce:

1/2 cup soy sauce

1/2 cup mirin

1/2 cup sake (You can drink some while you are at it)

1/2 cup water

2 tsp brown/white sugar or rock sugar

Combine all contents into a small pot, boil, and reduce to half.

For preparing chicken:

Use 4 Chicken thighs or chicken breasts and cut them into bite sized pieces. 

Cut green onions into 2 inch long slices. 

Soak bamboo skewers for a few minutes in water. 

Put the chicken and green onions onto the skewers. 

Once the grill is hot, put the skewers on the grill. 

Sprinkle salt and pepper on chicken and green onions. 

Cook over high heat until cooked through. 

Brush the Yakitori sauce on the chicken, when the chicken is close to being cooked.  

Optional: A few minutes before you remove them from the grill, you can also put a light coat of mirin on both sides.

Vegetarian option: You can grill any vegetables (e.g. asparagus, eggplant, zucchini, etc.) you want and brush them with Yakitori sauce.
