What’s on the Menu? Chicken Soup with Vegetables and Tomatoes

As part of the country is getting a major snow storm and the weather is still chilly out for us in the Northeast despite spring being around the corner, hearty soup is on the menu.  Here’s one of our favorite soups to make at home.  It’s simple and delicious. The kids even like it, too! 

Ingredients and Directions:

2 lbs ground chicken

1 small yellow onion, chopped

½ tsp ground ginger

½ tsp ground coriander

1 tbs dried oregano

1 can (14.5 oz) of diced tomatoes

Vegetables (spinach, kale, or diced zucchini and summer squash)

Chicken broth, 2-3 cans (14.5 oz can)

Salt and black pepper to taste

Sauté chopped onions until tender.  Then, add ground chicken.  Add ground ginger, ground coriander, oregano, some salt and black pepper.  Stir for a few minutes. 

Add a can of diced tomatoes. Stir and cook until chicken is done.

Add 2 cans of chicken broth. Cover pot and let it come to a boil. If prefer thicker soup, 1 or 2 cans of broth is sufficient.  If prefer thinner soup, 3 cans of broths is recommended. 

Add vegetables and taste. There are a few vegetables we like to add in this soup.  Spinach is one of our favorites.  A combination of zucchini and summer squash is a good option, too.  Once vegetables are cooked, soup is ready for serving. 

Soup is good on its own.  It is also delicious when it’s served with some diced red onions, avocados, with tortilla chips or cooked short pastas.
